What "honey" means
Nothing to do with honey the food. In honey (or pulped-natural) processing, the cherry skin is removed but some or all of the sticky mucilage is left on the parchment during drying. The sugars in that layer feed a gentle fermentation and caramelise, so the bean absorbs sweetness and body without the full fruit contact of a natural.
Honey vs washed vs natural
| | Washed | Honey | Natural | |---|---|---|---| | Mucilage removed | all | partial | none (whole cherry) | | Cup | clean, bright | sweet, round, balanced | fruity, heavy, boozy | | Consistency | high | medium-high | lower |
Sub-types
"White / yellow / red / black honey" describe how much mucilage is left and how long drying takes — black honey (most mucilage, slowest dry) is the sweetest and riskiest.
Taste
Caramel, brown sugar, stone fruit, soft acidity, syrupy body. A crowd-pleaser — sweeter than washed, cleaner than natural.
