How it works

  1. Decoction — fine coffee powder in a two-chamber metal filter; hot water drips through slowly to make a concentrated brew.
  2. Milk — boiling hot, added to the decoction.
  3. Sugar — to taste.
  4. Pull — poured back and forth between tumbler and davara to froth and cool it.

"Degree coffee" refers to decoction made with the first, strongest drip.

The blend

Traditional kaapi is an Arabica/Robusta blend, often with chicory. Robusta gives body and crema; chicory adds a dark woody sweetness and stretches the coffee. Ratios from 90/10 (mild) to 70/30 (strong).

Roast and grind

Medium-dark roast, fine grind. Freshness matters — buy small.
