Powder vs whole beans

Whole beans, ground fresh, always taste better and stay fresh for weeks. Pre-ground powder is convenient but stales within days of opening. If you buy powder: buy small, buy often, keep it sealed and cool.

Grind size

South Indian filter wants a fine grind — finer than drip, coarser than espresso. Too coarse and the decoction is weak and sour; too fine and it clogs the filter and turns bitter.
