What natural processing does

The whole coffee cherry is dried intact — on raised beds or patios — for 3–5 weeks. The bean ferments slowly inside the fruit, absorbing sugars and fruity, sometimes fermented, compounds before hulling.

The cup

Heavy body, low acidity, dark fruit (cherry, berry, raisin), chocolate, sometimes a boozy or wine-like edge. Big, sweet and rich rather than clean and bright.

Roasting considerations

  • Uneven density and sugar — easy to scorch. Ease off gas through the middle.
  • Longer development (DTR 22–25%) to integrate the fruit.
  • Watch first crack closely — naturals can run away.
  • QC every batch — drying variation means more cup inconsistency and the odd ferment fault.
