Match the lot to the roast

Light / filter roasts — want clean, dense, high-grown washed lots. Acidity and origin clarity survive a light roast; defects don't hide.

Medium / all-purpose — washed or honey lots with balanced sugars. Forgiving, broad appeal.

Medium-dark / espresso — naturals and heavier lots add body and sweetness that hold up as the roast develops. Also cheaper lots where a darker roast masks minor inconsistency.

What to check before buying for a profile

  • Density & altitude — sets your charge temp and airflow.
  • Moisture — 10–12%; drier lots move faster through the roast.
  • Screen uniformity — tight range = even development.
  • Crop year — current crop for predictable behaviour.

Always sample-roast first

Roast 250 g on your machine, cup at 24–48 hours, and only then commit to volume. A lot that reads perfect on paper can still roast unevenly on your specific machine.
