The varieties

  • S795 — the backbone of Indian Arabica. A selection of Kent × S288, rust-tolerant, reliable yield. Nutty, chocolatey, balanced, medium acidity.
  • Chandragiri — a dwarf selection with good disease resistance. Sweeter, fuller-bodied, rounder.
  • HSD (Hibrido de Timor) — an Arabica–Robusta natural hybrid line, hardy and clean-cupping. Bright citrus, floral, "washed-Ethiopia" character. Increasingly bottled as specialty micro-lots.
  • SLN 9 — an Ethiopia (Tafarikela) × S.12 Kaffa cross, grown in small quantities for its aromatics — jasmine, stone fruit.
  • Cauvery (Catimor) — higher-yielding, cleaner acidity, planted in some newer blocks.

Processing on top of variety

The same S795 tastes different washed vs natural vs honey. Variety sets the base; processing sets the character.

| | Washed | Natural | Honey | |---|---|---|---| | S795 | cocoa, clean, balanced | dark chocolate, cherry | caramel, round | | HSD | citrus, floral, tea-like | tropical fruit, funky | honey, apricot |
