If you think you don't like coffee, you probably don't like bitter coffee — and most bitterness is fixable.

Where bitterness comes from

  1. Dark roast — the darker the roast, the more carbon and bitter compounds. Switch to light or medium.
  2. Robusta — much more bitter than Arabica. Choose Arabica or a low-Robusta blend.
  3. Chicory — adds a woody bitterness to traditional filter blends. Try no-chicory.
  4. Over-extraction — grind too fine, water too hot, brew too long. Coarsen the grind, use 92–94°C, keep filter contact under 4 minutes.
  5. Stale coffee — old beans taste flat and harsh. Buy fresh, small.

Smoothest, sweetest beans

Honey and lighter washed lots, Arabica, medium roast:

Brew for sweetness

  • Grind medium-coarse.
  • 1:16–1:17 coffee-to-water.
  • 92–94°C, not boiling.
  • Taste as it cools — sweetness comes forward.
